Eggplant Masala Curry

Eggplant Masala Curry








Ingredients:


  • 4 Eggplants,
  • 1 Cup Onion sliced,
  • 1/2 Cup dried coconut sliced,
  • 1/2 Tomato chopped,
  • 2 Garlic cloves,
  • 1 Teaspoon ginger chopped,
  • 2 Tablespoon coriander chopped,
  • Salt to taste,
  • 2 Teaspoon red chili powder,
  • 1 Teaspoon Garam Masala,
  • 1 Teaspoon Coriander powder,
  • 1/4 Teaspoon cumin powder,
  • 2-3 Curry leaves,
  • 3 Tablespoon oil,
  • 1 slice lime,
  • 2 Cups water.


Instructions:

First heat the pan on medium flame,add oil and heat,now add onion and saute for 5-10 minutes or until red brown,then add coconut and saute for 5 minutes.Now add onion,coconut in grinder pot,add tomato,garlic,ginger and make fine paste.

Now heat the pan add oil and heat now  add paste ,garam masala,red chili powder,coriander powder,cumin powder salt ,saute for 5-10 minutes or until oil separated and keep aside.

Now cut eggplant in between and soak for 2 minutes.Then stuff eggplant with prepared stuffing.Heat the pan add oil and heat,now add stuffed eggplant and water as per needed,cook covered for 5-10 minutes or until gets cooked completely.

Garnish with coriander.Serve hot with lime and meal.
